Why does the flavor of a fruit gel made with agar feel muted compared to the raw fruit puree?

Because agar forms a firm, rigid gel network, it physically traps volatile flavor molecules inside its matrix. If the gel does not melt completely at body temperature in the mouth, those flavor compounds are swallowed before they can reach the taste receptors and nasal passages. Shear-blending the agar gel into a fluid gel before serving breaks up this matrix, liberating the fruit particles and significantly increasing flavor release.

Does the acidity of fruit juices impact how plant-based gelling agents set?

Yes, high acidity can degrade the molecular structure of certain hydrocolloids, particularly when heated. Agar-agar and carrageenans are susceptible to acid hydrolysis at high temperatures, which breaks down their long polysaccharide chains and weakens their gelling power.
